Another recipe from Mom’s book – Crustata is misspelled – it just adds to the charm!
I found my mother’s old recipe books and had a great time reading all the recipes she had used. One of the books had recipes typed, you know with a typewriter, on loose leaf paper. Here’s a biscotti recipeĀ – notice how some things about the process are just understood and not completely spelled out (baking time, temp). I will be trying this recipe soon but I won’t change anything about this vintage copy of it!!

We have been developing this wood treatment for about a year and it is finally ready for release. Cutting Board Balm is a great way to treat the wood of a new cutting board or any wooden utensil. It preserves and seals the wood when new and re-conditions older wood after it has been cleaned and dried. It is made with all natural ingredients that are purified and are food grade. It’s too cold to go outside (at least in Pennsylvania) – use your time indoors to perfect your cappelletti making. Try some new recipes or just stock up on your family favorite. Cappelletti can be frozen and used at a later date. Ecco a voi e qualche grande pasta!
4 cups fine bread crumbs
4 tablespoons flour
1 tablespoon pepper
1 dash nutmeg
1 dash cinnamon
Pinch of lemon rind (optional)
1 1/2 cups grated Parmesan cheese
6 eggs (mix in one at a time)
Mix all ingredients until it forms a moist ball. If too moist add a small amount of bread crumbs. Put the mixture through a meat grinder to form short “worms”. Lay the pasatelli on a cutting board and allow to dry before storing. They can be frozen for later use.
To cook pasatelli make a clear chicken broth, bring to a boil, place pasatelli in the chicken broth then lower the heat to medium, boil slow for about 15-20 minutes and then serve.

In trying to stay with hand-made locally sourced items for sale on our website we were able to find a local Italian woodworker who will be making these boards for us. These are the first two offerings but we have more items coming very soon.
We are thrilled to have the opportunity to demonstrate the Cappelletti Maker tonight at the Career Technology Center in Scranton. We will be making cappelletti and serving some in soup and sauce. Our audience will be our local Chef’s organization and Career Technology culinary students. We are always happy to share our recipes and knowledge with interested groups!
